In Honor of World Vegetarian Day

While I’m not a vegetarian, I do happen to love quite a few vegetarian dishes. Fresh rolls happen to be my all time favorite snack. In honor of world vegetarian day, I will give ya’ll my favorite fresh roll recipe! 

  
10 spring roll rice paper wrappers

1 large carrot, peeled and julienned

1 large cucumber, julienned

1/3 cup chopped purple cabbage

1 ounce cooked rice noodles/rice vermicelli (optional)

1 avocado, sliced

handful fresh cilantro 

5 large green lettuce leaves (any kind you like)

  
Take a large bowl and fill with warm water. Place one of the rice paper wrappers into the bowl of water. Leave the wrapper in the water until you feel it getting soft (about 20-30 seconds). Take out of the water and place on your prep surface. 

Now- all you need to do is arrange your veggies in the very center of the wrapper (use whatever combo you like! I put a little bit of everything). Now simply fold the wrapper like you’d fold a burrito 😀 

For dipping sauce- I like to use this one:

 thai peanut dipping sauce  

If you want to add meat, shrimp is my favorite addition. I didn’t include it in this post because then it wouldn’t be vegetarian!
